Tell your doctor about all your self-sufficiency, home growing, and livestock dreams. Be warned you may start talking about seeds, the state of your garden and how many jars of home canned food lines your shelves to anyone within a five-foot radius.

We cannot and do not make any guarantees to the efficacy of these recipes when doing these on your own in your own kitchen. Simply put, there are simply too many variables when it comes to growing your own food, canning, herbing, and raising livestock. What we do offer is what has worked the best for us. It is our hope that it works out the same for you, too!

What People Are Saying:

About 25 years ago my husband bought me a pressure canner. I was so deathly afraid to use it that we ended up selling it. I recently bought a Presto and bought the weighted gauge to use with it (didn't want to purchase the All American and never use it). Today I successfully canned 14 pounds of beautiful organic green beans. Thanks to Melissa's canning class I had no fear and enjoyed every moment of it. I'm now making a list... can't wait to do more pressure canning!

I wasted hours searching online for canning, gardening and homesteading advice I could understand and trust. Overwhelmed and intimidated by all of the conflicting information I even questioned whether I had it in me to do this whole “homesteading” thing. Then I found Melissa and the Pioneering Today Academy and slowly I started to regain my confidence and build my homesteading skills one by one. I especially love the “Home Canning With Confidence” section. I always wanted to learn to can, but was really intimidated. Now I put up hundreds of jars of home-canned food each year and have overcome my fear of pressure canning once and for all! This has truly been an invaluable resource for me on my homesteading journey!

The Academy & members of this group have literally changed my life. Before joining this group I didn't can food. Today I have 163 jars of vegetables and jam. I am now getting ready to can beets for the first time. I still have tomatoes growing for sauce and diced tomatoes. We have filled, literally, a small freezer full of vegetables. Money may be tight but between this group and what God has given us the right to raise and buy we will not be hungry. It is a blessing to be a member of this group and continue to learn ways to help us be more self sufficient. I may not ever buy a loaf of bread again." Update: we ended up with over 400 jars at the end of our first season with the Academy!
